Gluten-Free Coconut Nests with Chocolate Eggs

Ingredients

  • 3 cups sweetened shredded coconut
  • 1 ½ cups chocolate chips (milk, dark, or white)
  • 1 tbsp coconut oil
  • Candy-coated chocolate eggs or jellybeans for decorating

Instructions

  1. Line a baking sheet with parchment paper.
  2. Melt the chocolate and coconut oil together in the microwave (30-second bursts, stirring in between) until smooth.
  3. Stir in shredded coconut until fully coated.
  4. Scoop small mounds onto the baking sheet and shape them into “nests” with a spoon.
  5. Press 2–3 candy eggs into each nest while still soft.
  6. Chill for 20 minutes or until set.

Tips:

For a lighter flavor, try half dark chocolate and half white chocolate. You can also use colored coconut (tinted with food dye) for a springtime twist.
